Summer Snacking Series: Week 2 – No-Bake Protein Energy Bites

Need a quick snack that keeps up with your busy summer schedule? This week's Summer Snacking Series features No-Bake Protein Energy Bites—a simple make-ahead snack that's perfect for work, sports practices, hiking, or long car rides. 

Energy bites combine wholesome ingredients like oats, peanut butter, flaxseed, and honey to create a balanced snack rich in fiber, healthy fats, and protein. Unlike many packaged snack bars, homemade energy bites allow you to control the ingredients and limit added sugars. 

Oats provide whole grains and fiber, while peanut butter contributes to protein and heart-healthy unsaturated fats. Flaxseed and chia seeds add omega-3 fatty acids and additional fiber, making these bite-sized snacks both nutritious and satisfying. 

Easy Energy Bite Recipe:

  • 1 cup old-fashioned oats 
  • ½ cup natural peanut butter 
  • ¼ cup honey 
  • ¼ cup ground flaxseed 
  • 1 teaspoon vanilla extract 

Optional: mini dark chocolate chips, chia seeds, or unsweetened coconut 

Mix all ingredients together. Refrigerate for 20–30 minutes, then roll into bite-sized balls. Store in the refrigerator for up to one week or freeze for longer storage.

Double the recipe and freeze half the batch. Frozen energy bites thaw quickly and make an easy grab-and-go snack whenever you need one.
